Jeudi 15 is described as a peasant wine and made in a way to enhance drinkability. The grapes are hand-harvested, 2/3
whole bunch and fermented in an open wooden vat, pressed after one week and transferred into stainless steel. The ferment
finishes in July. After a period to settle the wine is bottled without filtration, fining or sulphur.

Recipe:

Sicily Sicily off Southern Italy is the largest island in the Mediterranean and produces a large quantity of wine, much of which is consumed locally. The best known classic Sicilian wine is Marsala, a fortified wine, red to white and dry to sweet. Of recent the red wine production has increased favourably in quality and now some exceptional wines with spice, opulence and real depth can be found predominantly from indigienous grape Nero d’Avola, Nerello Mascalese but also the international grape Syrah.

Anna Martens, Etna Anna Martens makes red wines in Etna that are both pleasurably fruit and more than a bit wild. Nerello grapes are hand-harvested, 2/3 whole bunch and fermented in an open wooden vat, pressed after one week and transferred into stainless steel. After a period to settle the wine is bottled without filtration, fining or sulphur.
