The Cabernet Franc is a delightful surprise. Carmine-red this shiny wine has lifted aromas of ripe blueberry and red cherries as well as varietal flavours of twig and pepper. The fruit carries on all the way supported by pleasing acidity. Tom Lubbe’s benign influence is clear here.

Recipe:

Languedoc Roussillon Languedoc Roussillon in Southern France stretching from the Rhone in east to the Pyrenees in the Southwest is the largest wine producing region in France and in recent years has seen an upsurge in the quality of wines produced. Minervois, Coteau de Languedoc, Costieres de Nimes, Corbieres, Fitou, Saint Chinian, Cotes du Roussillon are the names to look out for. Grenache, Mourvedre, Cinsault, Carignan give the reds a deep colour with warm spicy flavours while the whites can be dry, aromatic and exotic: Not forgetting the dessert wines of Muscat de Lunel and Muscat de Rivesaltes – sweet and luscious.

Domaine de Majas Tom Lubbe works biodynamically in vineyards high in the Fenouilledes as well as further down in Calce. His old vine Grenache gris and Macabeu is from tiny yields whilst his Reds are an elegant savoury blend of Carignan, Syrah, Grenache and Cabernet Sauvignon.
